
Cottage Cheese Flatbread
A simple, nutrient-dense flatbread recipe made with just a few clean, wholesome ingredients. Perfect as a wrap, pizza base, or side to your ancestral-style meals.
🥣 Ingredients
- 1½ cups Daisy Cottage Cheese (only contains cultured skim milk, cream, and salt — 4% milkfat)
- 2 organic, free-range eggs
- ½ tsp each of the following organic seasonings (or adjust to your taste):
- Black pepper
- Onion powder
- Garlic powder
- Smoked paprika
- Thyme
- Rosemary
Instructions

Add all ingredients to a blender, Nutribullet, or food processor.

Blend until smooth and well-mixed.

Preheat your oven to 350°F (175°C).

Line a cookie sheet with parchment paper, then grease the paper lightly with your favorite ancestral fat:
- Beef tallow
- Ghee
- Pure olive oil
- Coconut oil

Pour the mixture onto the sheet and spread it evenly into a rectangular shape.

Bake for 30–45 minutes, depending on your oven.
- It’s done when the edges are deep golden or dark brown — mine is perfect at 30 minutes.

Remove from the oven, flip the flatbread onto a cooling rack, and let it rest for a few minutes.
Tips & Serving Ideas
- Slice into strips and use as sandwich wraps
- Make a guilt-free grilled cheese (use real butter to grill)
- Top with grass-fed butter, smoked salmon, or pâté
- Toast lightly before serving for extra crispiness
